Up until about 4 years ago, I had never made a quiche. It seemed like a brunch and breakfast recipe that was too advanced for me. Then one of my friends told me her secret and all of a sudden quiche was one of the easiest meals to make. She either buys a frozen crust or pastry dough for a single pie crust, and then mixes in eggs with different combinations.
An easy quiche, doesn’t take much work, but looks and seems fancy. It’s great to make for guests, a special brunch, or hosted events. This week we made quiche for Kurt’s birthday and it was so good! We wanted to make him feel special and loved, and it worked.
Usually, we keep our quiches simple by mixing eggs, cheese, spinach, salt, and pepper. Every now and then we add some other ingredients too, and all the ways we’ve made it have been so good! Check out this great post loaded with ideas for different mix-ins for a delicious quiche.
Easy Quiche Recipe
Sweet & Savory Zucchini Quiche
Ingredients
- 1 pastry for single-pie crust (or frozen pie crust)
- 1 tbsp olive oil
- 1 zucchini chopped
- 1/2 c frozen corn
- 1/2 c sausage crumbles
- 1/2 onion sliced
- 6 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 c shredded mozzarella cheese
Instructions
- Preheat oven to 400. Remove pie crust from freezer, or prepare pastry dough by rolling on a lightly floured surface, transferring to a 9-in pie pan and trimming pastry dough. A frozen pie crust doesn't need to be removed from it's tin plate, and can be cooked as is.
- In a large skillet, heat olive oil and add zucchini, corn, sausage crumbles, and onions. Stir until tender.
- Whisk eggs and seasonings until blended.
- Stir in cheese and zucchini mixture.
- Add the mixture to pie shell and bake for 35-40 minutes until a knife inserted in the center comes out clean. To easily move the quiche, I put the tin or pie plate on a cookie sheet to bake on in the oven.
This easy quiche recipe is a favorite! If you want something sweet and savory it hits the spot! It’s a breeze to make and may get you some bonus points for being a little fancier than scrambled eggs. This is such a good recipe and includes several servings of vegetables too. It’s filling and healthy.
