Easy Grit Bowl

Ingredients
  

  • 3/4 c quick cooking grits 
  • 3 1/2 c water
  • 1 tsp salt
  • 6 eggs scrambled
  • 2 diced sausage links (we use the chicken apple sausage from Costco)
  • 2-3 diced red or yellow potatoes
  • grated Colby Jack cheese

Method
 

  1. Add the salt to the water and bring to a boil.
  2. Mix in the grits, then reduce the heat to a simmer.
  3. Continue cooking until the grits are thickened and the water absorbed, about 10 minutes.
  4. Scramble the eggs, and sauté the potatoes and sausage.
  5. Remove from heat and add eggs, sausage, potatoes, and cheese.
  6. For extra creaminess, you can also mix in butter and salt to taste.
