Fancy Blondies with White Chocolate Chips
Blondies with the perfect combination of butter, brown sugar, vanilla, plus white chocolate chips. Made in individual serving sized ramekins and topped with ice cream.

- 2 c all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 2/3 c melted butter
- 2 1/2 c packed brown sugar
- 2 eggs
- 3 tbsp vanilla extract
- 1 c white chocolate chips
Preheat the oven to 350 degrees and grease 10 ramekins, then set aside.
Combine all dry ingredients in a bowl, and mix.
Add the melted butter, eggs, and vanilla into the dry ingredients.
Once combined, gently mix in the chocolate chips.
Evenly divide the mixture between the 10 ramekins.
Bake for about 20 to 25 minutes.
Once the blondies have cooled for a few minutes (maybe 5-10 minutes), top with ice cream and serve.
If the blondies aren't quite warm enough when serving, microwave individually for about 15 seconds, especially if you want the ice cream to melt a little bit on top.
