Easy Grit Bowl

Ingredients
  

  • 3/4 c quick cooking grits 
  • 3 1/2 c water
  • 1 tsp salt
  • 6 eggs scrambled
  • 2 diced sausage links (we use the chicken apple sausage from Costco)
  • 2-3 diced red or yellow potatoes
  • grated Colby Jack cheese

Instructions
 

  • Add the salt to the water and bring to a boil.
  • Mix in the grits, then reduce the heat to a simmer.
  • Continue cooking until the grits are thickened and the water absorbed, about 10 minutes.
  • Scramble the eggs, and sauté the potatoes and sausage.
  • Remove from heat and add eggs, sausage, potatoes, and cheese.
  • For extra creaminess, you can also mix in butter and salt to taste.
